Spicy Paleo BBQ Sauce

So, if you’re like me…you need to spice up your life a little bit. Can’t just eat plain food too much. My solutions have been to do either curry or, my new favorite: BBQ Sauce! And because buying BBQ sauce from the store won’t be paleo (just check all those ingredients 😉 ) – and if you find a Paleo-friendly one from perhaps a Wholefoods or something -you’re probably not getting much bang for your buck. The better way is to just make a nice big batch of your own – because then you’ll know what went into it (and you can flavor it to your own personal liking)Spicy Paleo BBQ Sauce:

Ingredients (I wanted a bigger batch, so I doubled everything here):
– 1 6oz can tomato paste (preferable organic)
– 1 to 1.5 cups of beef stock (if you buy, you want it without salt)
– 3 Cloves Garlic
– .5 of an onion (I used a ‘sweet onion’ just for different flavor)
– 2 tablespoons dijon mustard
– 2 tablespoons apple cider vinegar
– 1 tablespoon Extra Virgin Olive Oil
– 1 teaspoon sea salt
– 2 tablespoons chili powder (alternate more/less of this depending on how spicy you may want it!)

(this was my first run…so I was starting to sub some things I didn’t have…regular mustard+honey for my lacking dijon mustard…chicken broth for lacking beef. On my second batch, I made sure to grab those items from the grocery)

Directions:
1. Dice your onions and garlic as fine as possible. You want your BBQ sauce a little chunky but the more fine you dice these, the better the flavor will spread through the entire sauce. –(I like to Saute these first before adding anything else….get it to-where the onions begin to brown a little bit)
2. Combine all ingredients in a sauce pan. Whether you use 1 cup or 1.5 cups of beef stock will depend on how thick you want your sauce.
3. Bring sauce to heat on stove with a low setting
4. Cover and simmer. Stir frequently and taste regularly. The longer you simmer, the more consistent your flavor will be. I simmered for 20-30 minutes.
5. Enjoy!

I like mine a little on the spicy side….I’ve made this now twice. The more I make it, the better I think it gets. I use this to add to just about any meat I’m cooking now. And in fact will cook chicken or ground beef (in a loose-meat fashion) and drizzle this all over it. VERY VERY delicious and VERY PALEO! 😉
